Fluffy Flourless Baked Custard Cake

Ingredients:

4 tbsp Caster Sugar

4 egg yolks

4 egg whites

1 Tsp Baking Powder

4 Tbsp Cornflour

400g Greek Yoghurt

Fresh fruit slices or dusting of icing sugar to decorate.

Method:

  • Whisk egg yolks and dry ingredients together.
  • Fold in the Greek yoghurt. 
  • In a separate bowl whisk the egg whites until soft peaks form then combine with above mix.
  • Pour into an 8 inch spring based cake tin (line with baking parchment in advance) 
  • Bake in pre-heated oven Gas 6/200c/400f for 1 hour on middle shelf
  • Remove from oven and leave on cooling rack for 30minutes then transfer to fridge to chill for 2 hours.
  • Garnish with slices of fresh fruit or a dusting of icing sugar, slice and serve.
