Coconut Milk Rice Pudding

Coconut Milk Rice Pudding (serves 4)

Ingredients:

400ml coconut milk

400ml water

100g caster sugar (can add more if you prefer sweeter)

200g pudding rice

Fruit of choice

Fresh lime 

Method:

  1. Add the coconut milk, water, sugar and rice in a saucepan. Bring to boil then simmer for 20mins until the rice is just cooked.
  2. Meanwhile slice fruit of choice – i used mango and a few berries – squeeze over a little fresh lime juice and set aside while the rice is cooking. 
  3. Spoon rice into serving bowls and arrange fruit on top. I sometimes sprinkle sesame or chia seeds on top and the rice can be served warm or chilled. Enjoy!
