Coconut Milk Rice Pudding (serves 4)
400ml coconut milk
100g caster sugar (can add more if you prefer sweeter)
200g pudding rice
Fruit of choice
- Add the coconut milk, water, sugar and rice in a saucepan. Bring to boil then simmer for 20mins until the rice is just cooked.
- Meanwhile slice fruit of choice – i used mango and a few berries – squeeze over a little fresh lime juice and set aside while the rice is cooking.
- Spoon rice into serving bowls and arrange fruit on top. I sometimes sprinkle sesame or chia seeds on top and the rice can be served warm or chilled. Enjoy!
