Coconut Milk & Mango Dessert
Ingredients:
100ml water, room temperature
22g gelatine powder
400ml coconut milk
400ml full fat milk
120g caster sugar
1 mango, peeled, stoned and sliced
Method:
- Sprinkle the gelatine over the water and leave aside to bloom.
- Place the milk and sugar into a saucepan over a gentle heat. Whisk until it starts to bubble then remove from heat.
- Stir the gelatine into the milk then pour the mixture into serving glasses. Allow to cool a little then leave in refrigerator to set overnight or until set.
- Top with sliced mango when ready to serve. Enjoy!
