Lychee & Champagne Mojito


8-10 mint leaves

30ml lychee liqueur

handful of ice

30ml freshly squeezed lime juice

60ml white rum

90ml champagne

Sprig of mint leaves to garnish


  1. Muddle the mint leaves and lychee liqueur in a cocktail shaker.
  2. Add the ice, lime juice and rum then shake vigorously for 20 seconds. Strain into glass and top up with champagne. 
  3. Brush the rim of the glass with the sprig of mint leaves and sprinkle a couple of leaves to garnish before serving. Enjoy!
