8-10 mint leaves
30ml lychee liqueur
handful of ice
30ml freshly squeezed lime juice
60ml white rum
Sprig of mint leaves to garnish
- Muddle the mint leaves and lychee liqueur in a cocktail shaker.
- Add the ice, lime juice and rum then shake vigorously for 20 seconds. Strain into glass and top up with champagne.
- Brush the rim of the glass with the sprig of mint leaves and sprinkle a couple of leaves to garnish before serving. Enjoy!
